Add casters to the metal wheel caddie in the pastry/delivery hallway so the entire rack of metal rectangle wheels can be moved into the LVO for daily cleaning. This will also require some safety restraint to keep the metal wheels from falling out while moving them. |

The 9Door thermostat temperature reading has been fluctuating a bit, Today it dropped from 450f to 210f in just a few minutes. Normally the temp will drop 35f just post loading or so, and it was a normal load as they go (good steam etc.)
This doesn’t seem to be a firing issue, I checked the temp with the temp gun and it didn’t reflect the posted temperature it was within 30-40f of the set temperature. The bottom deck seems a bit cooler but still temps within the above range |

The rack was turned around today and I cut my ankle on it.
Cleaning folks will be trained to ensure it's facing the correct way, but it's still a hazard. |
