Describe the problem: 
Hot water in building gets cold around 9-10pm. usually takes about 1 hour to kick back in. Has been happening every night for last few days.
Notes: 
We have a 300 gallon hot water heater. There are two times late AM and late PM that we run out of hot water. Most days it is fine. What happens at those times is we change the LVo water, the Hobart, and maybe the sinks and were out. We need to train the dishwashers to not change things at the same time but to space it out. It takes about an hour to recover if people don't keep trying to get hot water.
