Describe the problem:
The 9-door oven is not getting up to temperature, today it went as high as 420f and was set for 450f. Over the past week it would take its time getting up to temp but ultimately would but is still taking way too long to reach it. Over the last three days it hasn’t reached the set temperature at all. It is very problematic to bake bread in a cooler oven given how it affects generating steam. And also to have to wait until 2pm instead of 11:30 AM ish to begin the afternoon bakes.
Notes:
Closed back damper more and saw improvement today. Will turn draft inducer back on tomorrow and see how it performs on a bigger baking day.
